Stopover reccomendations, Hertfordshire to Gleneagles, Scotland

... but they're setting off from Hertfordshire, not Bristol ....Stirling and Perth won't break up the driving at all, they're both just round the corner from Gleneagles .....
Perth is 28mins away, Stirling 30mins, and the overall journey is close to 7h ....
The OP's already considering Edinburgh for a stopover so she's not ruling out somewhere close to Gleneagles at this point.
The West coast route does open up the chance of visiting Chester and has faster roads than going up the East Coast; going east maybe York or Durham might be worth a stop.
