Can anyone tell me the difference before I start downloading LibreOffice please?
The first one they give me is Fresh so I assume that's the standard one most people use?

They are libreoffice 4.2 and 4.1 versions.
4.2 (fresh) is a newer version with more features. But as it has more features and is quite new, it may have more bugs or possible problems.
4.1 (stable) is the previous major version, and because it has been out longer they have been fixing bugs and problems on it longer. So is more stable.
