When is cheapest to book? How late do I leave it?

I am looking to go away from 21 Aug for 10 days I can fly from any airport and would like Spain/Ibiza (family resort I have 2 children).
When is the best time to book, as we have a few days grace should I leave it late as possible? There are 6 adults and 2 kids. Am I running the risk of not getting us all together if I leave it to the week before?

As you have specific requirements you need to book to ensure you get what you want. I've worked in both salou and Ibiza during summer and sometimes there is no free accommodation at all.
You are also looking for a 10 day holiday which costs a premium with package holidays.
I'd book independently and get flights booked ASAP. Look at https://www.skyscanner.net then something like travelsupermarket.com for accom, checking reviews on https://www.tripadvisor.co.uk.
How you split the passengers will affect prices a lot too. Four adults sharing two one bed roomed apartments is usually cheapest and you can enter children as adults no problem0
