My current lunch at the moment is red lentil and tomato soup I made up
200g Red Split Lentils
1 Litre Vegetable Stock
1 Tin of Chopped Tomatoes
Put all ingredients into a large saucepan, cook on high until there is a rolling boil and then turn the heat down to a slow simmer and cook for 30 minutes. Season to taste, I put some garlic puree and tomato puree in mine, oh and some sea salt to taste.
Super easy to make, healthy and it works out at 27p per serving, you can get it even cheaper if you use a stock cube instead of the two stock pots I used oh I also seperated mine into 5 servings. Nomnom!Nessy x
