cheap but very healthy meal ideas?

Hi you lovely lot,

Well I have decided {once again!} to take control of my life and start eating very healthy again. It's not about losing weight, its about being as healthy as I can be, but obviously without breaking the bank!

Do any of you have any really healthy meals you like that you could share with me please? Or direct me to a thread with some already listed? We eat 99% of things, only things we don't are things like kidney, liver etc.

    Grilled tarragon chicken (skinless) with spring onions, side salad (no dressing), steamed minted new potatoes.

    Tuna (spring water) pasta with spring onions and chilli.

    Sweet Potato and Spinach Curry -
    Soften a chopped onion in the microwave.
    Pop in a saucepan with:
    Tablespoon curry powder, some chopped chilli or chilli powder, ground coriander, crushed garlic, turmeric and a bit of ground cumin.
    Pour over approx 300ml stock made with bovril or plain water. (I use chicken). Bring to the boil.
    Chuck in a couple of chopped sweet potatoes.
    Simmer until potatoes soft. Throw in a couple of tomatoes quartered. Wait until these have softened then add in spinach and some fresh coriander if you have any.
    Wait until spinach is wilted.
    Serve on its own in bowls or with rice.
    Yummy! Can use fresh or frozen spinach.

    Carrot and Coriander Soup -
    Basically boil up garlic, carrots, coriander and curry powder until carrots softened in either bovril stock or water, then blitz in the processor. Bring back up to the boil and serve.

    To be honest, most meals can be made healthy just by using less fat, it's the snacks I find trouble with. I recommend keeping chopped carrot sticks, celery, peppers etc. in the fridge which you can just nibble on when a craving comes along, perhaps with a low fat soft cheese to dip or some home made salsa - chopped tomatoes, some dry roasted pepper, crushed garlic and chilli to taste lightly blitzed in the processor. Hope this helps a bit. x

    I am pretty good at cooking always use no salt/sugar etc, but I'm looking for superfood type meals. The internet has proven to be my friend! Thanks for your suggestions.

    I want to know my body is receiving food of high nutritional value. I have previously tried this kind of food and physically felt top of my game, plus I think my immunity could do with a boost. I didn't want to mention anything as I'll get told off by the "we're not a doctors surgery" police, but I suffer from anxiety quite badly so am going to try the diet change to hopefully try and improve things.

    Try a girl called Jack's site, her Gigantes Plaki is lovely as is the Chickpea and Apricot curry (can't remember the correct name), both healthy.

    One of my favourite, healthy meals is baked beans on jacket potato with a side salad. I use a fat free vinegarette (sp?) on the salad.

    I love stir fry made with miniscule amounts of meat and heaps of fresh, crunchy veg (favourites are spring onions, mange tout, beansprouts, peppers, mushrooms). I don't use those gloopy, ready made sauces but a bit of soy, garlic and five spice. Serve with plain rice or noodles.

    Brown rice risotto made with smoked salmon trimmings (they're about 1.50 in the SMs) and hard boiled egg - add lots of veggies (include one onion family, one green leafy and one orange veg) and some peas or lentils. Add garlic and any herbs or spices you like to the risotto. Serve with a squirt of lemon juice.


    Gives you high quality protein, Omega 3s, fibre, fat soluble vitamins (A,D,E), vitamin C, B vitamins, an array of minerals and tons of phytonutrients, antiinflammatory compounds and antioxidants. Garlic is good for cardiovascular health. Keeps blood sugar stable. Tasty too.
