I have Redundancy Cover, if I take it out, in 3 months I get made redundant. Claim. Then decide actually I am going to be a student. Do I get the full 12 months cover (approx. £1500 per month)
How do the insurance company assess your case and make payments?
Whats the minimum amount of time I need to pay for cover it until I can claim?

It's based on qualification and ability to claim Jobseekers' Allowance.
Many insurers have an initial qualification period from when the cover first starts. It could be as much as 90 to 120 days to avoid claims from those who knew they would be jobless soon when they applied.

The answer is no, as you have to be registered as unemployed and job seeking ie registered for JSA.0
