hi all
I was wondering if you could give me your advice please
I have been making scones a lot lately really scrummy
but when they are cut they either crumble of difficult get knife in start to cut but if don't go really slowly will crumble
I cook tem on 170 as recipe says but it says 8-10 mins if only cook that long they are white? an very soft when tap underneath
I do preheat my oven
can you tell me what I am doing wrong please
its not that there not really nice they just crumble an awful lot

I had 2 thoughts could you be overworking the mixture
Or could your oven temp be too low. Is your 170 actually 170? Might be worth investing in an oven thermometer if you don't have one already.0 -
doubt they are undercooked as that would make them doughy not crumbly. I think overworking (possibly). Don't knead at all and mix as little as possible. Pat out don't roll. Get as many out of the first pat out as possible.
I do think that 170 is very low to cook scones at; I usually use 220C/425F/Gas 7 for 15 to 20 mins (keep an eye; some ovens you have to turn the baking sheet around half way through)0 -
I think your mixture is too dry. Try making it a little wetter.
I tried the Paul Hollywood scone recipe and it went against everything I had thought about when making scones. But they were the best I have ever tasted.
he also advises how to cut them out, which means you wont need a knife to cut them.

I read a tip on here, where they roll the dough out to half the thickness they want.
Then they fold it over & give it one light roll.
So they halve easier.
I haven't tried it, but I will.0 -
