  • I sometimes cook trout or salmon wrapped in foil with a dash of sweet chilli sauce on top and put into my remoska for 10-15 minutes (no house smelling fishy )I love trout made this way with a bit of butter and a few slice mushrooms on top wrapped in foil and cooked and served with green runner beans and new potatoes

    :T JackieO - Loving the sound of this for my OH. He adores trout but normally just steams it over some potatoes with some green beans in the 'lower level'. However, he's also a great fan of sweet chilli sauce - and also Tabasco.

    He's got a whole trout in the freezer right now and I'm out on Saturday evening for a small party - great opportunity for him to experiment a little :D.
  • I usually go for salmon en croute.

    For 6-8 portions -

    500g puff pastry
    900g salmon fillet (or several smaller ones)
    300g soft garlic and herb cheese

    Roll out pastry until it is large enough to cover all the salmon. Spread a generous layer of the cheese over the salmon on the skin side.

    Lay the salmon fillet(s), cheese side down, on the pastry.

    Wrap pastry around the salmon, brush with beaten egg on the edge and then seal up into a parcel (or parcels).

    Place on baking sheet, sealed side down, make a couple of diagonal slashes through the top and brush with beaten egg.

    Chill for 15 minutes (says the original recipe but I don't bother!)

    Bake in pre-heated oven (200 deg C, 400 F, gas mark 6) for 30 minutes or until pastry is golden.

  • Well the eating up of the fish is going well - we've had salmon trout and some unidentifiable white fish.

    The odd bags of veg are mostly gone - as sides or into soup.

    The family has decided they do actually like fish even if it hasn't come from the chippy wrapped in batter! So I think we'll be eating more of it in future.

    2nd son works for M0rris0ns and it's 20% off Mon & Tues for staff so I think I'll use some of my housekeeping savings to have a stock up taking advantage of the special offer.
