Living out of the Freezer

Please be kind to a long term lurker who is very impressed with the inventiveness of this forum.
I've just "inherited" the contents of my mother in law's freezer as she sadly passed away 3 weeks ago after a long battle with cancer. I already had a well stocked freezer (well 3 actually) but they are now at bursting point.
I am feeding an 81 year old father in law with diabetes, a husband who has had a gastric bypass so on a high protein diet, a uni student son, an adult daughter who has a manual job (hollow legs) and me (I don't eat rice - just don't like it).
I normally cook a reasonable range of meals and menu plan for a month at a time due to my work commitments. I don't cook fish very often and that is what I have mainly inherited. So please can you share your favourite fish recipes (mainly salmon).

POACHED SALMON
Serves 2
INGREDIENTS
2 x 250g fillets of salmon
2 tablespoons of oil
175ml (1 glass) of dry white wine
METHOD
Rinse the fish under cold water. Remove any excess water from the fish with some kitchen paper. Run your fingers along the fish and remove any remaining small bones with your thumb and forefinger or a pair of tweezers.
Put the fish, oil and wine into a frying pan on a medium heat. Cook for 10 minutes until the fish is firm.
ADDITIONS & ALTERNATIVES
Add a few sprigs of dill.
[FONT="]Use water instead of the wine. [/FONT]
This can also be used for Salmon in Pastry. A recipe is available on request.
POACHED WHITE FISH
Serves 2
INGREDIENTS
2 x 250g fillets of white fish
1 onion
250ml of milk
METHOD
Rinse the fish under cold water. Remove any excess water from the fish with some kitchen paper. Run your fingers along the fish and remove any remaining small bones with your thumb and forefinger or a pair of tweezers.
Peel the onion and chop it into tiny pieces.
Put the fish, milk and onion into a frying pan on a medium heat. Cook for 10 minutes until the fish is firm and opaque.
ADDITIONS AND ALTERNATIVES
[FONT="]Add a bay leaf. Remove it before serving.

Poached white fish can be used in a fish pie. Again, a recipe is available on request.
[FONT="]PS. Do you have any trout fillets? If so, then my current favourite fish recipe involves these.

I have been doing honey and mustard salmon recently. I make a sauce/marinade mixing runny honey, whole grain mustard, a bit of olive oil and some kind of light vinegar like white balsamic or white wine vinegar. Pour over the fillets, cook at about 180 for about 15/20 mins, until sticky, caramelised and yummy.
Alternatively, chuck salmon fillets into a parcel made of tin foil with some slices of lemon - cook for about 15-20 mins again.0 -

I quite fancy trying all of them!
Just discovered that a bag of cauliflower had escaped the bag yesterday so has defrosted - cauli cheese soup for lunch for me today.
I think I will keep a record of how many "free" meals we get from the inherited food.

I do sweet chilli salmon - poach in water and then drain and cover in sweet chilli sauce pan fry or grill until the sauce caramelises
I also put in the oven in white wine with a big spoon of redcurrant jelly and bake with no covering until glazed then serve cold with a salad
also good with hollandaise as a classic recipe

No way could I type them all out every time. They're Word files, collected over the years. Then copied and pasted onto here, as and when required.If you fold it in half, will an Audi A4 fit in a Citroen C5?
