Saving Time in Outlook - Signatures with Default Subject Lines and Automatic Confirms

Hey I am looking for an answer to save me a lot of time if there are any Microsoft Outlook pros out there?

1. I use a number of signatures to send emails to different people and would like to save time by setting a default subject for each signature rather than it being blank every time!

2. When I send an email which includes another email address within the body of the message, I would like to know if Outlook can automatically send another 'confirmation' email to that email address? If that makes any sense?
