Can anyone give me a recipe for a good crumble topping please. I make them all the time, but they are either to floury or to buttery.
Whoever said practice makes perfect?

I know this is a cheat but could you just crumble biscuits over top of dish?

I use 8oz plain flour (2 cups), 5oz butter (or half a block-ish) and 3oz sugar (half a cup). Nigella uses self raising flour and says the best crumble is made by hand and my kids agree! I usually make it with my mixer but when I make the effort, they always notice. Oh yes, I always sprinkle a spoonful of demerera sugar over the top.

You can do a cheat with a little melted butter, some stale bread broken into small pieces, and some brown sugar. It is delicious, and is actually the topping(and base) for apple brown betty!

Replace some of the flour with oats for a different texture... (stir in after rubbing in the butter)

Chopped nuts are also nice added to the mix.

I use oil instead of butter & any mix of flour, oats, muslie, breadcrumbs, chopped nuts, sugar, cake & biscuit crumbs.

You can also substitute some of the flour with ground almonds.

And I agree with Magentasue - it's better rubbed-in by hand, I think the food processor makes the particles too fine.

Yep ! Get some oats in there. Maybe a touch of bran too. Don't even think of using white sugar. Get some brown in the mix, muscovado even. Unsalted butter works best.

Crumble and scones always work better for me when done by hand. Pastry doesn't. Go figure
