We are selling our home for approx £300K and will be buying another for about £200K. We may have to rent while we are house hunting. Where should we invest safely to get the best rate with instant access in the meantime?

Easy option is ns&i, though low rates.
You can put up to £85000 into a range of current accounts paying between 3&5% though this takes a little time and needs setting up direct debits etc, which may not be worth the hassle given the probable short time period.
