Gym membership

I took a 12 month gym membership in Aug 2012, and wrote to the gym to cancel this Aug 2013.
I paid the one months notice by DD in Sep 2013, and then cancelled the DD with my bank.
I started to receive letters from Harland group saying that I had broke the terms of my agreement and adding fees each time for this.
I emailed them explaining the situation, but they have said that no cancellation letter was received (I have a copy of the letter I sent the gym)
Their attitude was I had to pay up anyway, and they were demanding even higher fees.
I have now had a letter from a debt collection agency, adding even more fees. I called them to explain the situation, but they said that the balance of probability was that I was lying about cancelling my membership and therefore I had to pay or they'd take me to court.
Can anybody help as to were I stand if they do take me to court?

How did you send the letter of cancellation? Was it signed for delivery or did you get any sort of proof of posting at all?
