Help needed with deep sponge recipe

Help...

Trying to make a sponge cake (at least 3 inches deep). All my attempts (and I have tried numerous recipes) have risen in the centre but not at the edges. Or seem to burn at the edges before the cake is cooked.

Has anyone any recipes for an easy sponge cake which is deep?

Many Thanks

just make the recipe bigger, for instance i do a 4,4,4,2 recipe but will adapt it to fit the tin, or could you layer the cake

I just multiply up my usual recipe, or divide down if making smaller - I usually work to 50g flour, 50g butter, 50g sugar, 1 egg.

Maybe lower oven temperature, or cover edges with aluminium foil partway through to protect from burning?

I put a dip in the middle of the sponge mixture, before I put it into the oven. Also, don't use too much baking powder.

Pink whisk giant chocolate cupcake recipe. I half or three quarter the mixture as the full cake recipe has enough mixture for two seven inch round tins and it is moist very chocolatey and easy to make. It has vinegar in which is a new one on me? Hope you wanted a chocolate cake.

cover the tin with tin foil. I was a sceptic but i swear, you get an even rise without that hard crust on top. Comes out lovely and moist.

And cook on gas mark 3. I also triple line the sides with grease proof paper.

I use 8,8,8,and four eggs, whisk it all together, bung in two cake tins, and get them out when there is a trace of damp in the middle on the top. It continues cooking out of the oven. If you want choc cake, substitute 1oz flour for 1oz coco powder.

sounds like your oven is slightly too hot, so the top is cooked and "set" before it has time to rise.
