I do chicken and leek pie a bit like Generali - recipe from my mum so may have been the same cook book ;)

But cook the leek in some marge, when soft, stir in a small amount of flour, then take off the heat, slowly stir in chicken stock. Bring back to the hob and bring to a simmer. Add the chicken and some pepper, chuck in a dish and top with frozen puff pastry ;)

Have also used the same mix and added sweetcorn for savoury pancakes.

    Yum.

That'd work although I'd use butter not margerine*. If you leave the pan on the hob on a medium heat after you put the butter and flour in, you can brown the flour which gives the sauce a nicer appearance. Just be careful not to burn it.

*Many years ago I heard an interview with a very posh actress (don't remember which one). She said that her first childhood memory was sitting on her Grandfather's knee and him making her promise not to eat margerine. His job? Chairman of Unilever, massive margerine manufacturers.
    Butter also tastes better!

Thanks. Unfortunately too much dairy produce causes my eczema to flare up so butter is avoided

I use flora (which claims to be trans fat free) or olive oil spread really. ;)
working on clearing the clutterDo I want the stuff or the space?
  • I made something similar last night, but used a jar of chicken supreme and mixed in the chicken and some mushrooms and topped this with mash. It was really nice and will definately do this again.

My mum makes a chicken pie with condensed chicken or mushroom soup withe leftover chicken, and covers with pastry.

Regarding the white sauce - this would be fine as long as you put something else in to stop it tasting bland. As already suggested, I think that leeks would be great with this, and lots of pepper. Sounds delicious and will try this myself!

Well I made it & all they've got to do tonight whilst I'm out is heat it up :)

I hope it tastes as good as it smells :D

    I cooked onions & garlic.

Then I cooked cubes of chicken breast.

I added back the onion and garlic - which was blended by now as my 12 yr old doesn't eat onions and garlic (so she thinks ;) ) .

I added the white sauce, a little bit of mixed herbs, tin of sweetcorn, frozen peas and some fresh carrots chopped small.

I covered it with cheesy mash.

    Fingers crossed :rotfl:

I'd use just plain oil then.

    Your dinner-your choice of course!
