Chicken Pie/bake help please

OK,
I was all set to make a sheperds/cottage pie for tonight and after a rummage in the freezer there is no mince :rolleyes:
So, would I be able to change the mince for chicken and use a white sauce and still put mash on it?
I'm a [STRIKE]vegetable[/STRIKE] vegetarian and haven't made this before. I'm sure I've seen ready meals in supermarkets for similar thing but was just checking it would sort of work with chicken:o :rotfl:
Would I just use a basic white sauce for this? Any other ingredients needed?

now cos I've just got back from buying the potatoes and carrots and onions and now there's no mincemeat. How rude of Mr Quackers to let the meat run low. Its not my dept

no reason why you can use chicken but it will need onion and garlic I would say, potato and white sauce can be a bit bland. Parsley in the white sauce and maybe cheese would be nice!0

I cook chicken first then cut up in to cubes. I mix in cooked mushrooms & onions, sweetcorn or peas or anything i have handy. I mix in a white sauce and I cover with pastry or potato and bake...lovely0

onion and garlic go into everything I cook anyway - we always smell:rotfl:

Chicken goes well with sweetcorn - think chicken sweetcorn soup
I did a chicken casserole with onion, carrots, peas sweetcorn and a tin of condensed soup (coz I was feeling lazy). Was very nice.working on clearing the clutterDo I want the stuff or the space?0 -
if you have bacon that would be lovely. Ive had cheese in them before (shop bought cumberland pie with chicken had it in I recall), you could add some on top instead though. Parmesan goes well with chicken.
I would use parsley personally but im no herb expert!0 -
We don't eat red meat so my Shepherd's pie is always made with chicken. I actually mince my own chicken with the onion and also add cooked red lentils to pad it out.
I brown off the meat etc in the frying pan and then simmer it with some chicken stock and herbs (OH doesn't like garlic)
This is then put in the dish and covered with the mash.
I have never been able to make chicken pies with white sauce but will now try the above ideas0 -
I make a chicken pie from left over roast chicken:
Thinly slice a leek or 2 and gently fry in butter. When it's gone glisteny and translucent, mix in the shredded roast chicken
Make a white sauce (not too thick). Heat the milk to make the sauce with a bay leaf and a few peppercorns in it for flavour.
Add plenty of freshly grated nutmeg (or better, mace if you have it) to the white sauce and mix in the chicken/leek.
Either top it with sliced raw potatoes that are well seasonned and top with a little butter to get the pots brown or encase in pastry like a proper chicken pie.
It's an adaptation of an old recipe that I got from a Homepride cookbook from about 1970 that I used to enjoy cooking from when I was a kid.0 -

I do chicken and leek pie a bit like Generali - recipe from my mum so may have been the same cook book
But cook the leek in some marge, when soft, stir in a small amount of flour, then take off the heat, slowly stir in chicken stock. Bring back to the hob and bring to a simmer. Add the chicken and some pepper, chuck in a dish and top with frozen puff pastry
Have also used the same mix and added sweetcorn for savoury pancakes.

Thinking about it, if you wanted to do a veggie version, you could do it with something like leek, cauli and brocolli and exchange the white sauce for a cheese sauce (I'd keep the nutmeg/mace in).
I'd lightly boil the cauli (as it takes longer than brocolli), put the broc in raw and pretty much cook the sliced potato. Then cook in a hot oven for about 5-10 mins or something. You'd need to experiment so that the veg didn't come out overcooked but so that the top was nice and crisp.0
