recipe for non-runny gooseberry fool

I'd like to make some gooseberry fool from an abundant crop from the garden.
On each previous occasion the end result has been rather runny and not at all like the fool I buy or eat in restaurants.
Does anyone have a recipe please?

I used to love fools, marks and spencer used to have a big range - raspberry and gooseberry were the nicest.
If someone has a vague recipe I would love it too, I wonder if it would freeze ok?0 -

Here's my recipe and yes it freezes very well. :j
Gooseberry Fool
2lbs gooseberries
8 Tablespoons water
freshly grated rind of 1 orange
caster sugar to taste
1pt whipping cream
Cook gooseberries in water till soft. Pass through sieve. Stir in orange rind and sugar. Whip cream til just standing in peaks and fold it into the puree. Pour into individual dishes and chill. Makes about 80 -
I used to have a fabulous recipe for a gooseberry dessert, but I can't remember the quantities. It was just cooked gooseberries, crushed meringues and thickly whipped cream. Mash the fruit so it's still got texture, mix it with the cream, then fold-in the meringues and serve immediately - lovely and gooey and sweet and crunchy.0
