My friend is thinking of renting a room in a house share. Is it usual for all the sharers to be on one tenancy agreement (and be jointly and severally liable for the full rent) even if they don't know each other or would she usually have a separate agreement?

Only ever did this when a student as you know the people and know they're unlikely to be going anywhere.
As others have said I wouldn't touch this with strangers. In my experience 'young professional' rented accommodation is usually individually contracted...0
