Recipes that use lots of cornflour? Please help

Hi everyone, I purchased a huuuuge bag of cornflour from the cash and carry cos it was mega reduced as the best before date was may 07. I am loath to throw it away but want to use it up pretty quickly. Has anyone got any recipes that I can use it up with? I know BB dates are there for a reason, but it seems to be just fine still and I realy don't like to throw it away even tho it was cheap. Any help would be greatly appreciated. Thanks in advance.

'Best before' means just that, ie not 'fatal after'... I wouldn't worry too much and just use it up as you need. Cornflour is one of those ingredients that is useful in small quantities in loads of recipes but I can't think of a way to use masses at once.
Just keep it dry and cool and well protected from creepy crawlies and it will be fine for months yet0 -
I once made a cake called Sand Cake - I can't find the recipe at the moment but if you google it you may get something. It used boatloads of cornflour and was quite a nice change, very crumbly and it was lemony rather than rich.

I've just finished using up two bags of risotto rice that had got lost in the cupboard - they were two years out of date and were absolutely fine!
I think that as long as that sort of storecupboard ingredient has been kept wrapped up and dry it's fine for ages - obviously I wouldn't say the same for fresh chicken! I'm very careful about meat, fish and dairy products and I've never poisoned anyone yet, to the best of my knowledge.
Use by dates are a recent invention...
I use cornflour in cheese fondue!! Yum yum yum. Not the cheapest meal but a winner every time...

Hi Julia, thanks for replying - can you let me have the recipe for the cheese fondue? Have just googled cornflour recipes and was pleasantly surprised at the ideas I've got, especially as I managed to get a tortilla recipe or two from it and thats solved another of my queries. I'll keep the cornflour nicely stored and hope that I can get through it before there are any problems.

shortbread is nice with some cornflour replacing some of the flour, so how about making a big batch of that (it's jolly nice too). You can also use it to thicken gravy and sauces.0

I have used cornflour on occasion half and half with ordinary flour when making sponge mixture and even in pastry...gives light texture...not sure why I did it first but it works

Why not mix the cornflour with a few drops of food colouring and add a small amount of water until it is a thick paste and then put it in a tray. The kids can then write their names in it and draw pictures!My second favorite household chore is ironing. Use cornflour in cake recipes.
I had a recipe called Honeydew Sponge that used half flour and half cornflour and used icing sugar instead of castor sugar. It rises up beautifully, sometimes over the top of the tin if you put too much in!
The recipe was from an American cookbook I found in our library in the 70's.
I lost the recipe years ago but detail above is what I can remember.
If anyone has this recipe I would love a copy! I tried all over the internet and various rellies in US but could never find it.... don't throw the string away. You always need string!
