wedding cake advice

Hi all new to these forums but hoping someone can give me some advice, I am making my sons wedding cake pretty scary really as I know its got to be just right, its a 4 tier cake bottom 2 fruit and top 2 sponge, the top tier is also a dome so really 5 tiers that looks like 4, I am ok with making the cake and am starting practicing the icing, which will be sugar paste/ ready to roll icing and some royal icing lines piped on. what I would like to know is can I put it together the night before the wedding and if so where do I ask the reception to store it, or should I put it together the morning of the wedding, the wedding is at 1130 and I think the meal is about 3-4 pm. also how long is it likely to take me to stack, its a stacked cake with dowels not pillars. grateful for any advice

    I would suggest fitting the dowels and levelling it the night before, and taking it to the reception first thing (very early if it's an 11.30 wedding, so you've got time to relax & enjoy the day) to assemble there in the room. If you've already levelled it, you will just need to lay each tier onto the dowels so it shouldn't take very long.

    When I got married, my cake was in the reception room from 9am, we didn't get in there until 5pm (apparently the hotel staff all kept going in for a peep!)
  • Put it together at the venue the morning of the wedding. That way you know where and how it's been stored etc. You can dowel and build it at home, then separate the layers for safe transport rebuilding them when you arrive. Take an emergency repair kit with you too - a tube of readymade royal icing and a few icing decorations if you've used shapes (eg flowers) on the cake.

    I'd say that you definitely need to discuss this with the venue, otherwise you run the risk of turning up at precisely the worst possible time for them. Also, in my experience some venues insist on their own staff moving cakes into their final position and others won't let their staff anywhere near a home-made cake!

    And btw, don't be offended if the venue insists on taking a sample of the cake on the day ...
