It depends when you want to go, but Hilton currently have a sale on, with some good rates including breakfast. Don't forget to go through a cashback website to knock the price down further. Also there's a good 2 night rate available at the De Vere Belton Woods on selected dates in their winter sale - I just got B&B for 2 people 2 nights 5th to 7th Jan for £88 - CB.

You know the site is for the UK, maybe try searching google for coupons/vouchers etc.

Try living social and groupon for the city you want. I did this for Orlando, Miami and Fort Lauderdale. Got some great deals. Try hotwire secret hotels.
