Overheat stat kicking in within the boiler would be my best guess - looks like a proper GSR repair needs to be diagnosed and carried out.
(But as above, check all the valves are fully open first - you never know they may have been tinkered with when the changes were made)Perfection takes time: don't expect miracles in a day
