Travelling with A serious nut allergy

I just wondered if anyone has experience of travelling further afield with a nut allergy. My son has a serious allergy, carries an epipen but also has learning difficulties so couldn't self administer. I am therefore the one who has to check his food. We have holidayed throughout Europe but I have found a new wanderlust and want to travel further afield - China, Japan, Thailand, India - I could go on!! (there will be a lot of saving in between each one by the way). My oh's main concern surprisingly isn't "how on earth can we fund this" its a more pragmatic, how will we manage with the food. He has been to India for example and lots of nut oils were used. How does anyone else manage? Many many thanks
I'm not a failure if I don't make it, I'm a success because I :tried!
