Hot food for 100 guests at birthday party

I'm having a 50th birthday party in 3 weeks & have just found out that my caterer is going on a cruise & will now be away!
I am now having to do the catering myself & need help with ideas for some hot dishes (with recipes if possible) to go alongside the cold buffet.
I thought of chilli con carne & boiled rice, & maybe a veggie stew with potatoes & dumplings.
I have 2 x hot buffet servers with 3 sections in each to keep the food hot.
I'd appreciate your help x

    Chilli will work really well, it'll also be quite filling so you won't need a huge amount per person.

    Pork belly and chorizo stew (http://www.bbc.co.uk/food/recipes/porkchorizoandbutter_90830) is a good option and doesn't need a lot of prep/watching

    What about a nice chunky soup? Lentil, leek and potato etc

    Can you beg, borrow or steal a couple of slow cookers?


    Chilli, veggie casserole and a stroganoff? All served with a choice of rice, baked potatoes, crusty breads and a few salads and cold meats to pad it out?


    Good luck and have a great birthday. I turned 50 this year and it's the best age I've ever been, I love it....way better than 40!

    I'd do a curry, a mild chilli, a lasagne and a chunky soup or casserole. In the other 2 keep rice and jacket potatoes warm to go with them.

    Curry would be a good addition as you will prob be doing rice along with the chilli anyway?
  • Jacket potatoes would be easy to do loads of and would probably keep warm for ages in an insulated container. They'd go really well with chilli. Chorizo and sweet potato stew would be great too.
  • What about a large pasta bolognese bake, with a cheesy sauce topping. They keep warm for ages. Are there any cooking facilities at your venue? We had DGD's christening party for 100+ guests in a local church club, where there were massive catering ovens. They were a boon as I made 4 enormous tray bakes and we could heat them there. I did 2 corned beef and potato, a cheese, onion and potato and a bacon, cheese and sliced potato one.

    There's a small kitchen with a normal size oven, microwave & fridge, but I live just down the road so I'm sure I could get food there still hot.
  • What do you think about making some dishes in advance & freezing them? Then I could get them out to defrost the day before & won't have so much to do on the actual day
