It is just freezer burn, perfeclty safe to eat once cooked, although supermarkets have meat under read lights, not all meat is red.
Have a sniff before you cook it, your nose will tell you
Mince turns grey once you start to cook it any way
Go for it
PS the thing to watch out for is the packing swelling, not shrinking

On Christmas Eve?
Even if money is really tight, I wouldn't. I'd rather give them toast and jam for one night, than risk giving them food poisoning on Christmas Day when the pharmacies will be shut, and when they will have been looking forward to a day of fun, not a day throwing up or running to the loo.
Seriously, it only cost £1. Would it be the end of the world to throw it out? Is making everyone ill and ruining Christmas for the whole family only worth £1?0 -

Personally I would say no, and I used to work in a meat department for a supermarket and take a few items home too that looked a bit dodgy.
It is 5 months past the use-by date and clearly there is something not right about it. The packaging seems to have shrunk, perhaps this packaging had 'blown' and has been pierced in the freezer and then shrunk down. Air has definitely got to that, in an unsafe way.
