Slow cooked Topside of Beef ???

Hi ,my eldest DD flew through the door about half an hour ago and asked if I would cook her topside joint of beef overnight in my SC. Now I have cooked lots of things over the years in my SC but never topside.Would you
A. sear it first in a pan to brown it off (normally I just hurl the meat into the cooker)
B. lay it on a bed of veg(I do this with a chicken)
C turn it on last thing before bed and hope its not all fallen apart by the morning (also done with a chicken)
Answers between now and 11.p.m. if you can

I would sear it before I put it in the slow cooker

I cooked brisket a couple of weeks ago and normally chuck it in raw but seared it for a change, OH and DS both commented that it tasted nicer.

I would also add some stock or wine to to the slow cooker, and also would cook it over night

I cooked mine in the slow cooker, I had bought a few last year when they were half price.

I didnt sear it, and never have so cannot make a comparison. All I will say was that it shrunk a lot. I covered mine with wine and one of the stock pot rich beef things and a little water. Left it for six hours. Made fantastic gravy.

My husbands verdict was that it tasted great but not as good as brisket.

    Good luck!

I don't sear but I do bung it on a bed of carrot, onions, celery and parsnip, half a bottle of red with a beef oxo and a dash of water.

The veg is amazing in a soup afterwards :)

  • I seared it by putting some garlic olive oil in my flat pancake pan and turning it gently for all four sides. She had bought it in M&S and it looked like a rectangular brick with some layer of fat on top.It had a coating of ground black pepper and sea salt rubbed in and the fluid that came out in the pan I chucked in with a bit of wine and water.I have got it turned onto low and have left it to cook gently overnight.By the morning it should be done and I will leave it to cool and then slice it with my electric slicer and wrap in foil for her to put into her fridge for Christmas day.She also has a turkey crown as well which she will cook tomorrow night .She has her in-laws coming to dinner on Wednesday I shall be there until around 11.a.m. then I go to my youngest Dds for christmas dinner then we all go back to my eldest Christmas night for a family buffet/party.so anything left from lunch gets eaten up that night.I will be doing around 6 dozen sausage rolls tomorrow morning and also I have biscuits to make for DGD Holly's boyfriend Toby as he loves HM biscuits.
I hope you all have a fantastic Christmas and keep warm in the grotty weather
    Cheers chums

I cook topside in the SC - usually sear it (but not always) and lay it on a bed of veggies - I always cut off the added fat though before putting it in.

Hope you have a fantastic Christmas too Jackie - and everyone else too :)
  • SC beef was gorgeous and this afternoon I sliced it with my electric slicer and will take it to Dds shortly along with 5 dozen sausage rolls made for the buffet tommorow.I made a couple of dozen for my youngest DD as well which I will take around tomorrow when I go with the presents
Have a great Christmas folks and keep your head down from flying slates :):)
