Highview Parking - Hereford, Appeal 'rejected'

Hi,
Apologies if I should have read one of the millions of threads on here but I thought it might be best to start my own, hopefully short.
BLUF - I parked in a Hereford retail centre car park for too long (2 hrs 55 mins) on 19 Oct 13. I received a PCN - and, not realising that the rules had changed, ignored it.
Did some research, realised the rules had changed and on receipt of a 'legal action pending' letter that is now talking about £125 owing, sent one of the stock emails outlined on this site about the charge bearing no relation to the loss.
Just got an email back that simply says 'you've taken too long to appeal the charge remains at £125' without answering any of my questions.
I'm tempted to simply ignore as they have explained nothing although clearly I have failed to appeal in time. I certainly don't intend to pay.
What happens next?

Got a letter back from Dixons - very polite, saying if I sent them the details of the 'fine' they would get in touch with Highview via the retail park and try and get it overturned. Got a call today from the park manager saying that it had indeed been overturned and to ignore any further demands.
