HELP my fruit and veg box on the turn

some of it i have binned already, i had not really ventured into my fridge since saturday morning when all was looking good and i was meal planning.

i could sit here and cry at whats been wasted and what i may have to waste (and everything thats happened since friday not just at my veg box)

anyway i got some mince out my freezer last night thinking quite stupidly i would have a nice amount to use over the next few days.

anyway
carrots i can now bend in half
have 3 very soft necturines (3 had some white fluff, so ive binned them the remaining look ok)
sad looking bunch of spring onions
lots and lots of apples and satsumas
vine tomatoes they look ok just squishy
growing potatoes so now no good for jackets.
brown bananas
2 peppers (they do have fluff round stalk so not sure if ok)

already thrown
lettuice
cucumber
cherry toms
3 bananas
3 nectarines
brocolli.

i have a couple if ideas
apple and an apple and nectirine crumbles (would these freeze ok)
banana bread (again can i freeze)

any other ideas welcomed other downside dont have a huge amount of cooking time at the moment

    to be honest i think i would be phoning the supplier and complaining. even organic veg should last longer than that, especially when stored in the fridge!
    as for recipes i would do fish cakes or bubble & squeak type cakes with the spuds and spring onions.
    just stew and freeze the apples, you can decide what to do with them when you have more time

    Hi there fizzle
    I would put your raw mince in a casserole dish, add the carrots - grated, chop up the peppers(open them up, you will know from the inside if they are ok..and shove it in the oven..no liquid to start with-so the mince roasts, then add a couple of stock cubes a sprinkle of oats (to thicken) and some water and shove it back in the oven....theres your base...

    You can then divide it up and add some chilli etc to a portion
    make a shephers pie - using the pots, mashed and soften the spring onions and mix em in

    The tomatoes i would probably sprinkle with a bit of olive oil and salt, roast in the oven and then blitz and freeze..makes a great base for pasta sauces, chilli etc

    MMMMM dice the apple and stew with nectarines and freeze in portions for individual crumbles or with youhurt

    that leaves bananas...definitely banana bread -yes it freezes
    that just leaves satsumas....better get eating those as i cant think of anything better than eating em as they are:rotfl: :rotfl:

    ive had the box since last wednesday so i kinda expected some to be funny just really dont want to waste anymore

    Grate up the carrots and add them into the mince for making shepherds pie, lasagna or whatever. You won't notice they are soft as they will be grated up and cooked anyway.

    Vine tomatoes are lovely roasted in the oven - doesn't matter that they are squishy as they will be when cooked anyway. Just drizzle olive oil over and roast. I like to do chopped sweet potato, chopped red onion and chopped red pepper in with the tomatoes.

    Bananas, yes I'd peel, mush them and freeze them if you don't want to make banana bread or banana cake today.

    Potatoes - as soon as they start to sprout a bit I usually peel and chop the lot, boil for about 5 mins and freeze. Then just roast them later when you want them (or boil them a bit more and mash them).

    thank you and hopefully something will temp ds into eating, he is getting very wary or anything getting near his mouth as i am bullying him with antiobiotics 4 times a day

    Just wanted to say i'm sorry to hear about your veg box. I grow loads of veg but i've found if i don't eat some things within a day or two they go soft and horrid...i assumed it was because i don't use chemicals...but looking at the items in your box i'd have expected them to last longer in the fridge than they have done..maybe you should complain as they are expensive.

    I find that bananas tend to go black faster in the fridge, so it's best to keep them in a fruit bowl or one of those banana trees. My mum actually improvised one of those, with just a loop of string that could be hung from a cupboard knob, which does seem to keep them fresher for longer. With the potatoes, I'd just cut out the sprouty bits and bake them as usual. Maybe you should switch to a slightly smaller box, or less frequently?

    bananas are great in the oven wrapped in foil.

    You slit them through the skin with a knife, all along from the tip to the end in a straight line, being careful not to slice the banana in half through the opposite peice of skin.

    Then carefully open enough to put some choc chips in (choc chunks work better and IMO dark ones are the best), making sure they are pushed down to the bottom.

    Then put in the oven or on a bbq for as long as you like really, I find until the skins go completely black is perfect but as long as the choc has melted that should be fine. Then remove from the skins and serve with ice cream or cream.

    Maybe this could tempt your little boy, mushed up together it would be yummy!

    If you have bananas in the fridge that will turn the other veg, bananas emit a gas that makes other fruit and veg ripen quicker. bananas should never be kept in the fridge.
