Hi everybody, I really love the ones you can buy in Asda and Tesco but I fancy making them myself but can't find a recipe for them. Can you help me out please?

Not sure what kind of mince pies you are taking about, are these ones simular to say cherry bakewells with a thick layer of icing ontop of the filling?
Or are they just normal mince pies with icing on. TBH there are many, many recipes its basically a shortcrust pastry with either homemade or bought "mincemeat" filling.
This year I am also trying those pinwheel things-normal made with cinnamon/butter/sugar in the swirl, made with dried cranberries in the dough and mince meat in the middle, rolled and cut. Then once baked drizzled with white icing yum yum.
I will be making my mince pies shortly in a big lot and freezing them in batches. They don't take long to defrost and a quick zap in the micro or warm in an oven and they taste like freshly baked nom nom.

I can see on the tesco website they have some that are like the bakewells. So you make a shortcrust pastry which you cut and line your baking tray with-looks like quite deep pies so a muffin tray would be better than a traditional shallower UK pie tray. Add a filling of mince meat and then bake-sort of mincemeat jam tarts-you might have to watch the filling doesn't burn cooked like this, but should be ok, if worried could part bake the cases, add the filling and finish off together. I have made mince pies with a lattice top or partly open with a cut out on top-e.g a pastry star or heart etc so reckon it would be ok.
Once cooked you will need to cool. Then you would make a fondant icing, you would need to make quite a soft/runny fondant to pour on top, then let set. You can buy packets of fondant icing to mix yourself or make your own from scratch, I reckon the roll out stuff would be too fiddly and the stuff on those pies looks like it has been poured on not cut and added on.
