How about 3 bean and tuna pasta. AND, it's only 3 weight watchers points
Salad
1 400g tin kidney beans
1 400g tin other beans (I use baked beans not in tomato sauce, can't
remember what they are called but they sell them in
Lidl near the kidney beans)
100g french beans
1 small red onion chopped
1 185g tin tuna
Dressing
2 tblsp tom puree
1 tblsp olive oil
1 tblsp white whine or rice vinegar
Method
1. Cook the french beans
2. Mix the onion with the dressing
3. Add all the beans and mix up.
4. Add the tuna and mix
I do up to the end of stage 3 then freeze in 4 portions in freezer bags then in the morning I grab a bag and a tin of tuna then mix it up at lunch time. By lunch the beans have defrosted.
Or, Pasta and sweet pepper salad, only 3 1/2 points on WW
Salad
2 peppers sliced thinly
1 bunch spring onion sliced
12 cherry toms
6oz pasta cooked
Dressing
1 tbsp olive oil
1 tbsp white wine/ rice vinegar
2 tbsp fresh oregano (I use 2 tsp of dried)
Method
Mix the dressing in a salad bowl and add all the salad except the pasta and mix.
I freeze in 4 portions and then cook the pasta in the morning whilst I'm having a shower then pour cold water on it and drain it a few times till it's cold then bung in a lunch box with the bag of frozen peppers. It's all nicely defrosted by lunch time. When life hands you a lemon, make sure you ask for tequilla and salt0 -

We don't have a fridge or microwave at work cos we have a canteen, but it wouldn't be very money svaing to use that everyday, also not very healthy either! Over the last few weeks I've been bringing in home made soup in a flask, but as it's finally getting warmer, this week I've started bring in salads. On sunday I made an investment, a special lunch cool bag, just the right size and some tuperware. So far I've been making a salad with lettuce, cucumber, red, yellow & green peppers, red onion, carrot and mushrooms, also had sweetcorn yesterday. I've then brought other bits in seperate small tubs to add at lunch time.
Monday I had prawns (put in tub frozen and had defrosted by lunch time but still nice and cold. Also, brought dressing in another tub.
Tuesday I had a tub of egg mayo and some home made potato salad
and today I have a small tub of cottage cheese with pineapple and potato salad.
I've also been having a small bread roll with it to fill me up.Total Debt (27th Nov 08) £16,707.03 Now £5,102.72Debt Free Date [strike]Nov 2012[/strike] August 20110 -
