    Christmas fridge cake

    (which is really not that Christmassy and is good for any time of year!)

    250g crushed digestive biscuits
    100g roughly chopped macadamia nuts
    100g dried cranberries
    200g dark chocolate
    100g butter (not margarine!)
    150g golden syrup

    Melt chocolate, golden syrup and butter together in a large bowl in the microwave.

    Stir in the other ingredients. Pour into a lined tin about 8" square (I use a silicone tin and it just pops out). Pop in the fridge to set and cut into small squares - it is very rich so they don't need to be very big! There's no reason you couldn't substitute the nuts and cranberries for other things, like mini marshmallows, different types of nuts etc.

    White chocolate and cranberry fudge

    350g granulated sugar
    25g unsalted butter
    175ml can evaporated milk (if the can size is a bit over, that's fine, don't bother measuring it out)
    100g dried cranberries
    300g chopped white chocolate

    Line a tin about 10x8 inches with baking parchment (or find something similarly-sized in silicone).

    Put the sugar, butter and evaporated milk into a large heavy based pan. I use a preserving pan. Head gently until the sugar has dissolved completely.

    Bring to the boil, stirring continuously with a wooden spoon, then reduce the heat and simmer for five minutes.

    Immediately take off the heat and stir in the cranberries and chocolate. Let the chocolate melt, give it all a stir together and pour into the tin. It should thicken up immediately. Spread it right into the corners of the tin.

    Let it cool, pop it in the fridge for an hour or so to set, and then cut into squares.

    This keeps for a quite a while but best to keep it in the fridge if you're going to store it for a while. I have very successfully packaged this up and sent it by post to my dad who has nibbled it over several weeks :)

    Rosetta I've got all the ingreds in a polybag in the back room and haven't touched it...Waiting for nearer xmas because I know if I make anything now I'll just eat it and think "ah I'll make more later on, there's plenty time" .... ;)
