    Thank you for all of your suggestions! Lots of things that I've made in the past but completely forgotten about. Since I went back to work after maternity leave and because I also started a business from home at the same time, It's been rush, rush, rush and we have been eating more processed foods.

    Definitely going to do a list for when I do my shop this weekend and get back to cooking.

    I haven't ever made a quiche (as I didn't know how) but will definitely be giving it a go now. Will also make mini ones for lunches.
  • Slow cooker helps me manage! I cut up veg night before and meat and throw it in first thing in morning before I go to work. Lovely coming home to a tasty meal and the house smelling yummy!

    If you're going to try quiches then get the tins with the push-up base as it makes it much easier getting the s0dding things out when they're cooked. Also, greasing them slightly with a bit of butter or oil helps too.

    You can do a frittata with leftovers and chorizo and maybe frozen broad beans and cheese. Toasted sandwiches. Pasta with smoked salmon and Philadelphia or cream sauce. Prawn curry. Stir fry. Slow cookers are brilliant but take some preplanning. If you do a Bolognese, make enough for four meals and freeze two. Convert to chilli as suggested above. Beans on toast. Pasta and pesto with cherry tomatoes or broad beans and mozzarella. Scrambled eggs on toast.
  • If you're eating processed food due to a lack of time, try making your own ready meals. It doesn't take much longer to cook a double portion of something and freeze half for another day.

    If you're not sure what will freeze well, have a look at the ready meals you can buy in supermarkets. If Findus can freeze it so can you!

    Was going to suggest pretty much the same thing. Salmon is lovely in the microwave, I rarely cook mine any other way. We usually add a teaspoon of pesto to the top to make it even nicer (easy to make your own and keep, although I just use from a jar). Sometimes with salad and rice/cous cous instead of potatoes. If cooking cous cous from scratch, remember to add lots of flavours to it. Try the Ainsley Harriott ones for inspiration. Under a £1 a pack (2 for a £1 in some supermarkets), and so quick and easy (although quite possibly not as good for you as making from scratch, not sure how 'processed' things like that are!)
