Buying nightmare..Clarification please!!

Hi there,
Wondering if anyone out there can help!!
I have an outstanding Vodafone default on my credit file which shouldn't be there, long story short it stopped me being accepted on our mortgage, so my partner applied on his own. We got an offer in principle.
Shortly after that we seen a house we liked and asked out solicitor to put an offer in, which they did 14th October. Got a phone call shortly after that confirming the offer was accepted congratulating us asking us to send over our mortgage info.and set an entry date for 29th November giving them plenty of time.
We then went back to Halifax and had to hand in my partners wage slips (which are done online) they refused to accept them. We went to the employer and got an "original" which was pretty much a print screen of their pay system. Again declined and told to get bank statements. We did this, and the mortgage advisor told us to reprint the first ones someone had applied with them and had been accepted. Then we get a call to say the company the seller has used, Halifax don't accept can we make payment to have another home report carried out. Which we have done, reluctantly.
Called the solicitor after this as I was a tad worried we had heard NOTHING. The solicitor was on holiday. This was two weeks ago. The solicitor standing in for him had said the offer that had been accepted was a verbal one and we weren't to make any formal arrangements. Need to add we had handed in notice where we are for Dec 2nd as we had been told it was in place, which it technically wasn't. Chased the solicitors up all last week for them to eventually say the sellers solicitors have advised she is on holiday and due back Thursday. While waiting on this they have asked us this week to fill in a questionaire for them. Now the £15k deposit was gifted to me by my grandparent, they are asking for proof of ID (shes in a care home and is sick to add in also) residential info, NI number, bank statement and proof of her selling her house two years ago from where the funds originated. This seems strange to me. Surely the bank statement from myself and from her is enough. Especially since it has been in my account for a while now. They then asked for the same for me as I have to transfer the money to Aaron I can't transfer it to them. I don't mind providing it all for me, but for my gran who cannot make it to her local branch to have to get TWO years worth of statements to prove this seems ridic!! They are saying they can't proceed with this and it may effect our entry date.
Can anyone help with this? Surely this is too much info, my family and friends in the similar situation never needed THIS much info. Its obviously very upsetting and stressful for my gran as she is incapable of doing this. I am going to her house to call the bank and get her to speak to them and ask to send statements but I feel its very unfair given the circumstances to want the quantity they do. Also pretty upset that they have waited until now to tell us as this could have been sorted out in October. If we have to put our stuff in storage I feel they should be responsible for not only lying and saying the offer was in place but for not actioning things until nearly a month later!! After complaining and explaining the circumstances a senior partner is calling me tomorrow.
Can anyone shed any light or guidance?

I'm sorry I don't know the process in Scotland so I might get things wrong where they differ from England. However can I clarify something, are you saying you gave notice on the rental you were living in before you had exchanged and before you had anything in writing that you even had a mortgage offer? I think all the fuss with your gran is to do with money laundering regulations and is very common nowadays. The solicitors have a duty to evidence that funds are legitimate and not from criminal means, and just sitting in your account for a little while is not sufficient particularly when you didn't save the money yourself.Don't listen to me, I'm no expert!0
