Airlines: taxes and charges

How infuriating is the trend of itemising taxes and charges on flights after offering a price. I am trying to book flights to Edinburgh on bmibaby.com and the so-called taxes and charges vary day by day and seem to be totally random!
Why are the airlines allowed to get away with labelling them this, when surely if they vary day by day they're more than FIXED taxes and charges? Or do taxes and charges to the same destination vary?
