I don't know about soya milk custard, but proper custard freezes well. My mother said that when she was a kid custard ices were a thing.
I'm not lactose-intolerant, but drink lactose-free whole milk, because it's half the carbs (lactose is milk sugar). It's normal milk, just with an enzyme added to break down the lactose. Also get the Lactofree soft white cheese as it has fewer nasties than Philadelphia. I think it's possible to buy lactose-free cream.0
