can I freeze custard?

I need a lactose free diet and have been buying soya ready make custard, at around £1 a go. Had the sudden brain wave that I could buy twice as much soya milk for almost half the price and make my own. But I would make twice as much as I need - so could I freeze it?

I don't drink soya milk, and I don't want to waste it, so if anyone has other ideas about what to do with it that would be good too. It wouldn't be any good for rice pudding for us cos we would use more than half a carton, and I'm not coming up with any other brainy ideas!

    If only using the soya milk for cooking, I would use what's needed for the custard then freeze the rest of the milk till you next need it.
  • Isn't ice-cream basically just frozen custard? It's what I usually do with left-over homemade custard made with regular cream. Freeze a while, take out, beat to reduce crystals, freeze again.

    I've also thought of making white sauce and freezing that - or maybe just eat custard twice in one week!

    The ice-cream idea would be a good one if I was making 'real' custard but I'm afraid this is just the stuff you make with powder out of a tin! Not sure if it would work as well.

    It looks as if powder-based custard will work for ice cream - my query would be the soy, and how that would fare in the process, but if you can afford to take a gamble on it and buy the whole carton of soy milk just the once, at least you'll find out, I suppose.

  • I've put a small amount of custard in the freezer to see if it works, and also make a white sauce and tried to freeze that. I'm also a bit wary about the soya as I've read different things about how well it freezes.

    Everyone ate the soya custard ok, so at least that bit of the plan works!

    Not sure where you'd find it, but when I was trying a non-dairy diet quite a while ago as a student overseas, I used to make custard with soya milk powder. It was better than normal custard! It was also economical as the powder didn't need special storage.

    Custard would never last that long in our house!
  • Just rescued the custard from the freezer - and the answer is 'no'. It went all rubbery, so i will have to think again,

    Wonder if the white sauce will have survived!

    Have you tried whipping the rubbery frozen custard with some fresh soya milk?
