    Purple donkey..how long did you cook your ghosts for? I followed a delia recipe but she doesn't say how long to cook them for and I have over cooked mine as they have gone a tingy orange colour ( I was worried about them being raw inside) as I think I left them on 140 for about 40 is mins :( any help appreciated :) Tia :)

    What I did was weigh 3 egg whites, then weigh the same amount in granulated sugar and icing sugar. Over a bain marie I stirred the granulated sugar and egg whites until the temperature was hotter than my hand and the sugar had dissolved (I was wearing a glove and stirring the whole time). Then whisked up the mixture until it formed stiff peaks (down boys). Then added the sifted icing sugar and whisk until just combined. Piped onto parchment lined trays, then put my oven on the absolute lowest setting. I left them on the middle shelf for 90 minutes, turned the oven off and left for a further 90 minutes without opening the door. I have a gas oven, I don't know if that makes a difference but it worked for me. Good luck :)

    Thank you for all for the lovely comments, had so much fun making those. I've decided to apply for GBBO next year and give up working in film/TV for good. I can't spend another year hunting for work and driving all the time, it's been depressing to say the least. So next year I'm going to start looking for baking jobs as well (if GBBO won't have me).

    You should apply for Bake Off. You could do a "Ruby" and look all doe eyed at Mr Hollywood every week :rotfl:

    Think you would do very well freelance PD. Several starter set ups for self employed people - might be worth looking into. And good money to be made - I have a friend who makes the most beautiful wedding cakes and does a roaring trade. Childrens themed birthday cakes always go down well for her too. Good luck with it :)

    Am I the only who is, well, fed up with Dr O pizza? Not meaning to be ungrateful or anything but they are not as nice as Goodfellas or Chicago Town :o.

    In March I won an amateur cake decorating competition. I really wanted a stand mixer and that was the main prize plus plenty of others including the decorating lesson with Charlotte White of Restoration Cakes. She's been bust writing a book this year hence why the class was delayed. Really looking forward to it though :D
