Starting a personal training business

I am currently going to be unemployed from my regular gym job in the next few weeks and was just wondering about a few things. I would like to start my own personal training business. Now at the moment I have had to apply for JSA and housing benefit because I am not going to be receiving any income but what happens if I start getting regular clients who pay £30 an hour ? I mean one week I could be doing three sessions and the next week no sessions at all as I am starting off.
So I would just like some advice one what to do really.
