    Apart from the ludicrous cost per kilo, the other problem with boxed rice is that it comes in such small pack sizes. Anyone who uses any amount (e.g. a chef) will buy much bigger packs for convenience as much as cost.

    Its an easy mistake to make but I think you'll find that chefs buy wholesale for their restaurants but when they are cooking privately for their families/friends will use ingredients from local shops/supermarkets.

    I would imagine when Jamie is cooking for his family at home he is more likely to use store bought ingredients where he goes for quality not quantity. He is not looking to make a profit from a meal he serves to his children ;)

    I'm guessing his association with Uncle Ben's came about from 30 or 15 minute meals,where speed was of the essence and for some reason it's stuck around. I agree it's a bit inappropriate, given that it's a show about saving money, and it's not like normal rice takes ages or is particularly difficult to cook either. Say what you like about Jamie, he's a consummate businessman.

    But actually, the book doesn't see to push Uncle Ben's anywhere near as much from what I remember. There's a picture of the box somewhere (the inside cover, maybe?), but I seem to remember that in the actual text about storecupboard ingredients, he seems to recommend buying normal rice and storing it in glass jars.
