I prefer to give gifts rather than money, I like matching gifts to people and seeing their pleasure when they open it, but gift giving is supposed to be about the recipient, not the giver. What I (and other members of my family) often do is to give a small gift plus the money - with the gift being appropriate to the recipient's interests.

So in this case you could give a something related to mountains / climbing - a small packet of Kendal Mint Cake, or Toblerone, plus some money, for instance. You can also be imaginative about how you wrap and present money, too - buy a toblerone, remove and eat the middle section, put a cheque in the middle with a couple of pieces of chocolate at either end... Buy a Karabiner / compass keyring and wrap a cheque round it.
Also - I think you mentioned he is at University - does h have independent transport? Even if he thinks of something which he'd like, consider whether it will be awkward for him to transport it back to Uni and whether something small and edible/drinkable/portable + cash might not be easier for him.
All posts are my personal opinion, not formal advice Always get proper, professional advice (particularly about anything legal!)

Why don't you find out what they want?

Would you like it if the cash was spent on bottles of pepsi or wasted on day to day things? Not really a present :P

It's difficult for teenagers and above, but for girls why not get a bunch of stuff from the Body Shop and make a little gift set? Online they always have a sale on - plus cashback too!

Too many people don't find out about others and what they like, so just give money these days. No wonder nobody knows their neighbours any more! :(
