If you are looking to go on holiday alone I would book the hotel and flight separately, I always travel alone and this tends to get me the best deal.
I can't recommend any particular hotels where you are going, but if you look on https://www.tripadvisor.co.uk you will find reviews of the hotels in the areas that you are looking at.
