    Thanks Wokkies

Perhaps I should have mentioned, I'm a novice cook - I have only recently graduated to omelettes! Was thinking cakey/biscuity type things :)
I'm not a very good cook either, just use google:rotfl: if I had 8 eggs I would probably boil them and put in the fridge or in vinegar:o
    to be updated:;)

muffins are so easy - I learned how to make them a couple of weeks ago and they really are fool proof :o you could make chocolate ones using the cocoa and some icing for the top of them to use up some of the icing sugar too :p or if you have some bacon, cheese and onion you could try quiche lorraine  now that would use up loads of eggs :D

I have 8 eggs that need eating today
If you mean that they are reaching their "best before" date today, then simply don't worry.

Eggs last for AGES after their best before date. At least a month.

If they sink in a bowl of water when you come to use them, they are fine. If they float, they are off. If they half float, they are not very fresh but they'll do.

If you made loads of pancakes and are now sick of them, they freeze very well! Just interleave them with greaseproof paper or foil or something.

Eggs last for ages - either you can use the water trick above - or just break one open (perhaps into a separate dish and before you get the other ingredients ready) - you;ll soon be able to smell if they're ok or not!!!
