Mexico holiday summer 2014

My family are planning to go to Mexico for my sisters 50th birthday next year. Unfortunately, she works in a school so is tied to school holiday periods. We're thinking of two weeks away in August and there will be six adults and two children (one 5, one 2). The budget is around £1,000 each...maybe a bit more.

Now, I haven't been abroad for years and certainly haven't been on a 'sun/beach' holiday for a long time. So, I thought I'd come in here and see if any of you helpful people can give any advice or guidance...and possibly point me to some deals if there are any about?

An 'all-inclusive' would be good but will probably cost alot more.
