I hope that this sorry tale serves as a lesson to people.
This company of most of their kind are lying thieves and are best avoided.

Please help me to know if we have a case against this company and if there is any way that we can have our money back on the grounds that they didn't deliver the services that they offered
What service did they offer and not deliver?
More importantly, what was the deposit for, and what are the terms and conditions of the deposit?and it was not our fault that we didn't exchange the contracts!.
Whose fault is it? It's not the notaries fault, because he needed the paper which you didn't have. I suppose you could argue it's Iberian International's fault as they didn't tell you that you needed the paper --- but did they promise to tell you everything you needed to take with you? Did they give you a list of items you would need and promise that you wouldn't need anything else?

Crooks steal money.
There's no point even trying to follow the paper trail. It's something to put down to experience and move on.
