you know those "chuck it in and see" type recipes......... well i made pasta sauce and put too much oregano in.. is there anything i can do to tame it a little ? its a bit too "herby" for my taste

Use it as a starter for the next batch of sauce, but don't add any oregano?
Otherwise can you tone it down by adding a bit more of the wet ingredients? eg if it is a tomato sauce or a bolognaise add an extra tin of tomatoes?0 -

Do you have any philladelphia or the cheap alternative? if so throw a dollop in,,, it should take the edge off of it for you ....
failing that i would try a couple of lamb or beef stock cubes...
