Possibly quite irrational on my part, but whenever I google and see a .com I assume it's likely to be a US company and if I'm looking for a UK based company .co.uk gets my attention first.

General rule is grab as many as you can afford: ^_~ (not limited to or including the following)
    .org
    .biz
    .net
    .com
    .co.uk
    .info
    .shop

You can point them all to the same website.

It's also psychological, as you said, you think a .COM to be big American firm where as some people think that a .co.uk is a small high-street company. Use the .com to give your company a bit more if a boost to your professional profile.

    .co.uk / .com

.org and .net are often confused and misremembered (such a word!)
    .biz considered gimmicky?

I'd tend to think Google think these are important / relevant so choose carefully.
