Neighbour cut tree roots. Tree now fell down

Great that the neighbour is sorting, and chickens DO love trees and shade.
But they are also curious little blighters and quite like novelty! My proper chickens enjoy access to small elders, willows and, um, rushes year round, and some bigger trees the rest of the time, but even a couple of small trees will give a dozen or so hens some dappled shade very quickly.
Ironically, my bantams have far more natural cover, they have mature trees and some big hedges and shrubs to sit under.
Favourite trees for them without doubt are the apples, where they can gorge on fallen apples at this time of year, or elders where they can leap for berries.
All my hens get enough shade and immenselpleasure from raspberry canes, but I'd still replant a tree personally.

Excellant, the chickens will soon find somewhere else to lay, just provide them with a few shrubs to lay under.

People on these forums are always doing the back room barrister thing, but the reality is that it costs serious time and money to pursue people through the legal system, and even then you have no great certainty of a result.
What's certain is that you'll end up with a neighbour dispute and the very real possibility of future hostility, manifesting itself in unpredictable ways.
In this case I'd go for damage limitation, by pleasant negotiation with the neighbour, if possible. There might be some mileage in asking for help with the costs of disposal. If not, an advert on Gumtree, Freecycle, Freegle or similar may put you in touch with wood-burning folk.
Look on the bright side, your neighbour has just given you a nice new fence and the opportunity to plant anew, this time not so close that things which grow large, end up astride the boundary.

There is also the point that would a "reasonable person" expect to have THEIR tree roots trespassing onto someone ELSE's land? (as that is what your tree roots were doing in the event and making it impossible for them to use their own land as they decided to.0
