Mexico Riviera Maya in May 2014

We are looking at booking 2 adults for 2 weeks in Mexico for next year and wanted to reach out to the forum for any good offers that may have slipped my attention. I am very flexible on dates but looking around the beginning of May (april seemed more expensive due to easter??). We don't want to stay in Cancun - would rather travel down the highway to the larger resorts. We have been to the area twice before staying at the Barcelo Maya and the Grand Palladium White Sands. We both like the larger resorts and it must be all inclusive. Our budget for the 2 weeks including flights/transfers/hotel is around the £2500 mark for both of us. Have looked at the big travel agent sites and found a few resorts but there doesn't seem a lot of options. Have looked at the Gran Bahia Principe resorts and also the Grand Sirenis Resort. Both look nice but keen to know of other resorts in the same area.
Although we are almost set on going to Mexico we would also consider the DM or Jamaica (although other half isn't to sold on Jamaica!!) We both have great memories of Mexico so would prefer there.
Any suggestions would be greatly appreciated.
