Just roasting tomatoes...my sis dropped a large carrier bag off yesterday that she's grown but won't eat..a bit past there best so into the oven they've gone...

I usually make my sauce when I want to eat it..or freeze small batches..just wondering if anyone puts them in jars..and if so how long would they usually last before they go off so to speak?

not sure if this has been answered but if i jar sauces i always heat seal them and they will last for over a year, i do this by putting sauces in sterilised jars but dont totally tighten lids then i use a large saucepan lined with tea towel and place the jars in boiling water up to the neck. and boil i do it for about 15 mins but some people say longer, then tighten lids if using kilner type jars you can close properly before boiling i use this for apple sauce. tomato sauces and pie fillings and fruit and veg and never had any go of..
