INSPIRE ME vine tomatoes

tomatoes are not something i buy, in my vegbox i have vine tomatoes and cherry tomatoes they are not something i would eat in a slad sandwich etc so some ideas would be great

oh and i have around 20 apples:rolleyes:

the rest of the box is good, ive seen cabbage recipies that i would like to try the califlower i have a few ideas for the rest i can cook with use easily. really looking forward to a strawberry and nectarine crumble tomorrow

    Butternut Squash Risotto With Garlic & Tomatoes

    Serves: 4

    400g Butternut squash/pumpkin, peeled and cubed
    leaves from 2 sprigs of rosemary
    olive oil
    300g cherry tomatoes on the vine
    1 red onion, chopped finely
    200g risotto rice
    700ml hot veg stock made with one stock cube
    2 cloves of garlic, crushed
    2 tbsp low fat soft cheese
    1 tbsp balsamic vineger

    1) pre-heat the oven at gas mark 7. Place the squash in a roasting tray in one layer and scatter with the rosemary. Spray with low fat cooking spray/olive oil and then place on the tomatoes still on the vine. Roast for 20 minutes, shaking half way through to prevent sticking.

    2) Meanwhile, saute the onion for 3 or 4 minutes or until soft. Then add rice and coat. Add a ladle full of hot stock and simmer, stiring frequently until liquid has absorbed. Add more stock and continue like this for 18 or so minutes or until rice is creamy but still has a little bite.

    3) Mix the garlic and balsamic vineger with the soft cheese. Stir into risotto, then add squash. Divide between 4 warm plates and then add the tomatoes on top.

    Cherry and vine tomatoes are lovely with a bit of olive oil and roasted. They're good in quiches and on pizzas. They're lovely on top of half an aubergine with olive oil and mozzarella or pesto and feta (I've been experimenting with another MSEer's recipe!)

    Or try them in an omelette. I made one the other day seperating the eggs and whisking them seperately adding parmesan to the yolks, then mix and add to pan and cook slowly. Add halved tomatoes and crumbled feta and put in oven till set.

    Or stir in to pasta dishes towards the end of cooking. Or if they're big enough to skin easily, skin them then roast them with a little oil and dried basil and make them into soup, Delia style.

    To be honest, I don't buy vine tomatoes. I find in GB (not Granny Broon!) tomatoes tend to almost tend to taste the same! Only time I think they have real flavour is when in Spain and I buy the fresh beefsteak ones off the market stalls. Totally different taste from those bought here.

    I don't buy vine tomatoes - the texture is a bit odd compared to the loose ones. Mind you tomatoes in the UK are a bit flavourless. I remember on a cooking programme a couple of years ago one of the cooks on tv (Brian something) saying that vine tomatoes are a bit of a con. The lovely tomatoey smell you get from them comes from the vine and they are no better than loose ones. Trouble is you pay a premium for them.
